Mozzarella Sticks for Super Bowl Sunday
 
 
Super Bowl Sunday is just around the corner, and with this annual football party come an assortment of deep-fried snack-a-tizers to sway you away from your New Year’s resolutions on healthy eating. Here comes Cooking Matters to the rescue with a healthful mozzarella cheese stick recipe that’s easy on your waist line, wallet, and time.
Serves 12, 1 mozzarella stick per serving or 3 pieces if using string cheese
Prep time: 30 minutes Cook time: 10 minutes
Ingredients:
Nonstick Cooking Spray
1 (8-ounce) block of part-skim (low fat) mozzarella cheese or low-fat mozzarella string cheese
½ cup low fat plain yogurt
1 cup plain breadcrumbs (store-bought or homemade)
¾ tsp dried oregano, divided
¾ tsp dried basil, divided
¾ tsp dried parsley, divided
1 (8-ounce) can tomato sauce, no salt added
 
1.       Pre-heat oven to 425˚F
2.       Coat a baking sheet with non-stick cooking spray
3.       Cut mozzarella into 1.5”x 0.5” sticks. Or cut cheese sticks into thirds.
4.       In a bowl combine bread crumbs with ½ teaspoon dried oregano, ½ teaspoon dried basil, and ½ teaspoon dried parsley.
5.       Dip each cheese stick into yogurt, and then roll in seasoned bread crumbs.
6.       Place breaded cheese sticks on baking sheet and freeze for 20 minutes. If you forgot to pre-heat the oven, that’s okay, just do it now.
7.       After 20 minutes in the freezer, give the cheese sticks a light spray with non-stick cooking spray.
8.       Bake for 12 minutes or until browned and softened.
9.       Meanwhile, in a small pot or skillet heat tomato sauce with remaining dried oregano, basil, and parsley. Stir to combine, and heat till warm.
10.    Serve and Enjoy!
